When did breakfast become a $15 decision?
A couple of eggs. Some bacon. A mountain of pancakes. Coffee. Suddenly you've spent $18 before you even figure out the tip.
And here's the strange part: people keep doing it.
That's why The Big Biscuit caught my attention.
This isn't some gigantic national restaurant chain. It started with one restaurant in Independence, Missouri, in 2000 and has been expanding gradually across Missouri, Kansas, Oklahoma and Arkansas.
In June 2026, it opened its second Arkansas location in Rogers, after entering the state with a Fayetteville restaurant in 2024. And in September, it announced another franchise development deal in Oklahoma as it approached its 40th restaurant system-wide.
That sounds small. It is. But here's the interesting part.
