Walk into a normal American supermarket and you already know the map.
Produce on the right. Bakery smell near the front. Cereal aisle roughly in the middle. Milk shoved to the very back so you have to walk past everything.
It is the same layout in Ohio, Arizona and Florida. That sameness is not laziness. It is a strategy. Predictability is cheap to run.
Now walk into a Food Bazaar in Queens.
The rules break immediately.
There are vegetables you cannot name. There are five kinds of fish on ice that never appear in a national chain. The signage is in multiple languages. The snack aisle looks like four countries had an argument.
And here is the thing that makes it interesting as a business. The store in Queens does not match the store in Brooklyn. Which does not match the one in New Jersey.
