Open a restaurant in 2026 and the playbook is obvious.

App first. Kiosk ordering. Delivery integration. A menu built for a bag, not a table. Some kind of bowl.

Now here is a chain that did almost none of that and kept opening hundreds of locations anyway.

Red vinyl. Checkerboard. A smashed thin burger cooked on a flat top. Frozen custard churned on site. A picture of a World War II veteran on the wall.

It looks like a theme restaurant. A gimmick. Something that should have peaked around 2014 and faded.

It did not fade.

And the reason is not nostalgia. Nostalgia is the paint. Underneath the paint is one of the tightest operating models in fast casual, and it was built on purpose.
